Entertaining for a special family occasion

kevindundonimageHaving large family events at home is no mean feat, be they First Holy Communions, Confirmations, Christenings or family birthdays. What I have done here is given you a number of options for main courses which you can have prepared in advance and then just generate as required. These are:

· Poached Salmon Lemon Mayonnaise

· Baked Mediterranean Chicken

· Thai Style Pork

I have also given you the recipes for a number of my favourite salads to serve with the dishes:

· Lemon & Broccoli Tabbouleh with Sun dried tomatoes

· Penne Pasta with basil pesto & roasted vegetables

· Summer Salad special

The beauty of the dishes I have given you is that they do not dis-improve dramatically and will in fact only get better each time they are reheated. At a family party you do not want/need to be cooking things up fresh to order as this can be a very time consuming and messy ordeal.

Plan ahead and then relax. Buffet style is always an informal approach and people can select whatever they would like. All of our main course recipes are suitable for 6 people and can be very easily multiplied or divided by themselves.

The meringue roulade is a very high impact dessert. When it is rolled and presented it looks absolutely fantastic and is very inviting to all guests. Make a number of these as people keep on returning to the buffet for more.
