
More and more people are saying to me that they do not know what to cook for their family when, as is often the case, time is of the essence. With a young, active family and busy life, I can completely empathise with them. Below I have come up with a number of tasty solutions which are both easy to cook and affordable….and the kids will love them!
Three easy family friendly recipes
One of our favourite mid week meals at home is cheesy beef burgers and red pepper relish. The burgers that I cook are delicious because they have a little cheese in them which helps to keep them nice and moist. My special added ingredient is ground cinnamon which gives them an unusual twist. I have teamed the burgers with Cajun potato wedges and a red pepper relish.
Another option that I have given you is a chicken and chorizo casserole and the variations for this recipe are plentiful. You can serve it with creamed potatoes, rice or pasta or you could top it with some pastry and use it as the base for a pie. The mixture could also be served on top of a vole u vent and served with a side salad.
My choice of dessert is a rhubarb fool and you could use the toasted granola element of this popular dessert as a healthy alternative to some other breakfast cereals.
